2 redfish fillets (skin on)
Rub flesh side with olive oil and dust liberally with your favorite seafood seasoning
Set aside and rest for 15 minutes.
Pre-heat grill to 365° and season grate with olive oil.
Place fillets flesh side down and grill for 3 minutes, rotate 90° and grill additional 3 minutes. This produces those beautiful grill marks.
Flip fillets and lather flesh side with Curried Mango Grille Sauce.
Continue grilling for 4 minutes or until flesh flakes easily with fork – apply a second coating of Curried Mango Sauce after 2 minutes.
