Cóctel de Camarones (Shrimp Cocktail)

INGREDIENTS

  • 1-pound large shrimp: shelled, deveined, boiled
  • juice of two limes
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro, plus more for garnish
  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 1 teaspoon Louisiana Hot Sauce
  • ½ tsp olive oil
  • ½ tsp garlic powder
  • ½ paprika
  • salt and pepper to taste

INSTRUCTIONS

  • In a small bowl combine the lime juice, red onion, cilantro, mayonnaise, ketchup, hot sauce, olive oil, garlic powder, paprika.
  • Add the cooked shrimp and mix well. Season with salt and pepper to your taste.
  • Serve with fried corn tortillas and garnish with chopped cilantro.
