Cucumber & Jicama Shrimp Cocktail
1 pound shrimp, peeled and deveined
1 Tbsp Zatarain’s Liquid Shrimp and Crab Boil
1/3 cup fresh lime juice
2/3 cup ketchup
½ tsp Worcestershire sauce
½ cup each diced (1/4” cubes) cucumber and peeled jicama
½ cup chopped cilantro
1 avocado cut into cubes
Fill a large pot with water and add liquid Zatarain. Bring to a boil. While the water is coming to a boil, prepare a cold-water bath in a separate bowl with ice cubes and cold water. When water comes to a boil, turn the heat off and add the shrimp. Let the shrimp soak for two minutes. Drain, then place the shrimp in the cold-water bath.
In a separate bowl, add drained shrimp, lime juice, ketchup, Worcestershire sauce, cucumber, jicama, and cilantro. Mix well. Fold in avocado.
Garnish with avocado slices and a sprig of cilantro and serve with tortilla chips.
